INGREDIENTS
- 2 eggs
- 3/4 cup milk
- ½ cup water
- 1 tbsp sugar
- 3 tbsp melted butter
- 1 tsp vanilla extract
- 1 cup plain flour
METHOD
1 Whisk eggs, milk, water, sugar, melted butter & vanilla extract in a mixing bowl until even. Then sieve flour and mix evenly. Rest batter for 30 minutes.
2 Heat pan over medium heat till hot, then coat pan with a thin layer of butter using a kitchen towel. Pour a small amount of batter into pan, and quickly swirl to form a thin, even layer.
3 Lower heat and let crepe cook until edges are dry. Using a spatula, loosen edges and turn crepe over to cook for a few seconds. Remove.
4 Repeat until batter has finished. Be sure to re-oil pan in between.

NOTE
- For browner crepes, add 1/4 tsp of baking soda. It creates an alkaline environment which promotes browning.
